    Located at 1000 Mtr above sea level and spread across 50 acres, this biodiverse farm stands out from other farms in the vicinity due to the high quality farm management practices followed in the farm with minute attention given to specialty coffee practices.

    Only fully ripe cherries were harvested, averaging 20 Brix. The selected cherries were inoculated with Saccharomyces Cerevisiae coffee yeast and placed in sealed tanks for a 56 hour anaerobic fermentation. After fermentation, the cherries were transferred to shaded raised beds and slowly dried over 21 days. The gradual drying process supports stability, aromatic retention, and a clean, expressive cup profile.

    This lot was created from only 70 KGs of green beans that required extreme precision in roasting. Our roasting team roasted this coffee medium with a target outer Agtron of 62-67 to express the true potential of this coffee characterized by a vibrant and expressive cup where mixed berries intertwine with ripe pineapple, guava and silky caramel, delivering a syrupy body, and an exceptionally long sweet finish.

    The true potential of this coffee can be expressed in the final cup with precision brewing. We recommend brewing this coffee using a pour-over method such as a V60, Chemex or Kalita Wave to appreciate this coffee’s entire flavour spectrum .
